  • Your simple ingredients
  • 1/2 cup medium tofu (optional)
  • 1 can Great Northern beans, drained and rinsed
  • 1 clove garlic, minced
  • 1/2 green onion, white part only, minced
  • 1 1/2 teaspoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup or less olive oil


  1. Place the tofu in a food processor.
  2. Add the lemon juice.
  3. As you blend the tofu and lemon, add enough olive oil to create a smooth blend of ingredients.
  4. Add beans, salt, and pepper to the food processor and puree until smooth.


  • Options: Kick things up a bit by adding your favorite flavors, such as roasted red pepper, roasted garlic, or herbs like dill and cilantro. If you choose not to add tofu, the spread will be a little grainy but still delicious.
